A whole food, plant based day

I often get asked, ‘But what do you eat?  And what do the kids eat?’. I’m always at a loss for words because the answer is everything!  Well, except meat, eggs, and dairy products…   So as an example here is the deliciousness that was our Sunday.

Smoothie: Banana, pineapple, mixed berries, parsley and hemp seed
Porridge: Oats with cranberries, sunflower seeds, cinnamon topped with toasted coconut and coconut sugar
Morning tea for the kids: Sliced apple, strawberries, and brazil nuts
Left-over pizza: Wholemeal sourdough base topped with mushrooms, olives, capsicum, pineapple, artichoke, rocket and baby spinach (sprinkled with chilli flakes for the grown ups)
Afternoon tea for the kids: Organic rice cakes slathered with peanut butter, dried apricots
Dinner: Roast sweet potatoes served with kidney beans, avocado, sprouts and a Mole sauce (recipe here)
Dessert for the grown ups: Chocolate pudding made with avocado and silken tofu, maple syrup, cocoa, chia seeds, natural vanilla essence

Anything there that takes your fancy? If you have any questions about the ingredients I’d love to answer them in the comments below.
